For those who wonder what overproofing your sourdough bread might do to the end results…

I didn’t bake this weekend, but that’s okay. Although, I do have my eye on some cinnamon raisin sourdough… www.theperfectloaf.com/cinnamon-raisin-sourdough/Was toasted cinnamon raisin bread with butter and cinnamon sugar sprinkled on top a part of anyone else’s childhood? Just mine?

No cinnamon raisin sourdough bread yet, but I will likely plan for it in the next few weeks. This weekend, I prepped whole-wheat sourdough pretzels for the ghost time in too long, and they’re currently in the fridge waiting for me to have the time to boil and bake ‘em: I also made Magic in the Middles (recipe from King Arthur Baking), which are good but I’m not sure they need to be rolled in sugar, though that does make them sparkly and pretty! Word to the wise: a teaspoon cookie scoop is NOT the same as a teaspoon measuring spoon. It’s bigger, haha! Also, these cookies take a while to assemble, so don’t start the process at 6 pm if you also want to bake a multi-step crostata for dinner. Which brings me to… My other bake from yesterday, Melissa Clark’s Tomato Crostata with honey t-h-y-m-e glaze, which is heavenly: Apologies for the bad lighting of that photo! Rest assured, it was delicious, but also probably the end of that meal until heirloom tomato season comes back in 2023. Despite the leakage (I have never not had leakage when making this), I had a crispy bottom crust!

This was from last weekend, but I figured I should post it here! My new perfect sourdough batard recipe, such cuties! Second shot shows the crumb. Quite nice and soft!

I need to do some baking. I haven't made anything since my apple pie a month ago. It's now winesap season, but not sure where to get them without paying the big entry fees to orchards. It's gotten ridiculous around here, some of them are $20 per person.

We made a coconut cake for my wife's coworkers' birthday this past weekend. We don't often make cakes so this was definitely a fun experience. And it tasted so good! Well at least the test cupcakes we made. Sent from my SM-G781U using Tapatalk

We made pumpkin snickerdoodles for thanksgiving, this is just one of three trays. This was a good recipe that we prepared this past weekend, made a couple to taste test and then made a large batch to freeze. Then we just took then out of the freezer today and baked them. Some non-sourdough baking, though I do need to make bagels later this week. This weekend was a crazy baking weekend for me, mainly because it was my weekend to bake all the cookies for our holiday cookie tins. So I baked five types of cookies, and then of course also, I had a desire to make blueberry muffins, so I threw those in too. I didn’t do a great job documenting because I was too busy making batter, baking, decorating, and packaging. Here are the cookies I made, including a last minute swap! Gingerbread Cookies Red Velvet Crinkle Cookies Soft and Chewy Candycane Sugar Cookies Sufganiyot Cookies Holiday Confetti Shortbread They were all successes! I did five cookies when I first started this 2 years ago, and I think I remember why last year, I did four cookies last year. In any case, what’s done is done!

Last random thoughts… - Candy canes are SUPER sticky when broken up into bits. Noted for any future candy cane crushing.
- The Sufganiyot cookies are the ones with the jam center — double doses of jam! These are meant to evoke the taste and texture of the jelly doughnuts that are typically had during Hanukkah! These were my fruit element, also.
- Dilute Royal icing with water to thin it out for brushing in - this helps speed it up when you need to decorate dozens of gingerbread!
